This low carb casserole recipe might not be for everyone as it has 25g carbs per serving. If you are in phase I you probably won’t be able to eat it, but once you get your carb intake up you should be able to fit it in just fine as long as you watch what you eat the rest of the day.

Ingredients
  • 5 skinless boneless chicken thighs cut up
  • 6 oz. chopped ham
  • 2 tbsp butter
  • 3/4 cup long grain brown rice
  • 1 ½ large sweet onions diced
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1 ½ cups chicken broth
  • Preheat oven to 350 degrees F.

    In a large skillet or heavy oven safe pot, melt the butter. Add the chicken and ham and saute over high heat until browned. Add salt and pepper to taste and mix well. Add onions, pepper and garlic, reduce heat to medium and cook, stirring frequently, for about 6 minutes until vegetables are soft. Stir in tomatoes and cook for another minute. Stir in rice and broth and bring to a simmer. Bake covered for 45 minutes.

    This low carb casserole recipe serves 6 and has 25g carbs per serving. It can be stored in the refrigerator for up to 3 days and heated in the oven until warm throughout.
