Low Carb Forever Eat Your Way Thin With These Recipes | | Ingredients5 skinless boneless chicken thighs cut up6 oz. chopped ham2 tbsp butter3/4 cup long grain brown rice1 ½ large sweet onions diced1 green pepper, chopped2 cloves garlic, minced1 cup crushed tomatoes1 ½ cups chicken broth |
Preheat oven to 350 degrees F. In a large skillet or heavy oven safe pot, melt the butter. Add the chicken and ham and saute over high heat until browned. Add salt and pepper to taste and mix well. Add onions, pepper and garlic, reduce heat to medium and cook, stirring frequently, for about 6 minutes until vegetables are soft. Stir in tomatoes and cook for another minute. Stir in rice and broth and bring to a simmer. Bake covered for 45 minutes.
This low carb casserole recipe serves 6 and has 25g carbs per serving. It can be stored in the refrigerator for up to 3 days and heated in the oven until warm throughout.
