Low Carb Pork Recipe For Stew

This low carb pork recipe makes a great stew with a medium amount of carbs per serving (15 g carbs). You can also add any low carb vegetables to it that you want but remember to add those carbs in to the total.

Low Carb Pork Recipe For Stew

Ingredients

  • 1 ½ pounds pork stew meat cut into 1" cubes and seasoned with pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • 2 tbsp olive oil
  • 1 can crushed tomatoes
  • 1 tablespoon whole wheat flour
  • 1 can beef broth
  • 1 garlic clove, minced
  • 1 small onion, diced
  • Dash red wine
  • Preheat Oven to 350 degrees

    Use a heavy pot that you can also put in the oven and heat 1 ½ tablespoons of the oil in the bottom. Brown the pork in the pot and remove to a separate plate (it may be faster for you to brown the pork a few pieces at a time). Add the rest of the oil, the garlic and the onion and stir on medium heat until onion is soft. Add a dash of red wine, the meat and the flour. Cook for 1 minute stirring continuously - this should thicken up the liquid. Add the tomatoes, broth, oregano and thyme and bring to a simmer. Transfer to the oven and bake covered for 1 ½ hours or until the pork is tender.
