Low Carb Quiche Recipe with Brocolli and Cheese

This low carb quiche recipe is somewhat of a cross between a frittata and a quiche. It can be eaten any time of the day and is great even at room temperature and can be stored in the fridge for about 2 days. Feel free to make substitutions for the brocolli and the cheese - how about some ham or maybe seafood?

Ingredients
  • 8 eggs, whites and yolks separated and at room temperature
  • 1 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup brocolli
  • 1 small onion, diced
  • 1/4 cup water
  • 2 Tbsp butter
  • Melt 1 tablespoon of the butter in a large skillet on low. Add the brocolli and onion and ½ of the amounts of salt and pepper. Saute until tender and set aside.

    Beat the egg yolks with 1/4 cup water and the rest of the salt and pepper. Beat the whites until they form stiff peaks and fold the whites and yolks together.

    In a nonstick skillet, melt the rest of the butter over low heat. Pour in the egg mixture. Sprinkle the cooked vegetables and cheese on top. Cover and cook until the eggs are set - about 30 minutes.

    This low carb quiche recipe makes 4 servings and each has 8g carbs.
