Low Carb Baked Chicken

This low carb baked chicken can be great to cook ahead of time and save for leftovers with any number of low carb side dishes.
You can eat it as is or saute some low carb vegetables like peppers, onions, asparagus or mushrooms while the chicken is baking and eat them together.

If you want to add a bit of sauce or taste to this baked chicken recipe, try substituting the broth for any type of low carb soup or broth of your making.

Ingredients

  • 1 Pound chicken breasts - boneless and skinless
  • 1 cup chicken broth
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • pinch pepper to taste
  • 1/4 tsp cayenne pepper (optional)

    Preheat the oven to 400 degrees F. Mix the broth, oregano, salt, pepper and cayenne together. Place the chicken in a baking dish with each piece side by side. Add the broth mixture. Bake until done - should be about 40 minutes.

    This recipe is basically just chicken so there are no carbs - unless you add a different broth and then you would have to add in the carbs from that soup or broth. Wouldn’t it taste good baked with a cream of mushroom soup instead of chicken broth?
