When picking out chicken breast, select those that look fresh and don’t have a lot of fat on them. I like to use Perdue even though it costs a bit more they are of very high quality.
1 cup shredded part skim mozzarella cheese
Spray a large skillet with cooking spray or coat with olive oil. On medium heat, cook the chicken breasts until they are slightly brown on both sides. Add the pasta sauce and cook for about 20 minutes or until the chicken is just about done. Sprinkle the cheese on top of the breasts and cook until it melts.
To add some more flavor, try cutting up some onion, mushrooms and peppers and putting them in to saute with the chicken breast.
This recipe makes about 4 servings with only about 14g carbs per serving (a bit more if you add the other vegetables)
