Low Carb Chicken Parmesan Recipe

When you’re craving an Italian meal, there’s not nothing like this low carb chicken parmesan recipe to fill the bill.Combine it with some low carb pasta, or try our even tastier and very low carb spaghetti squash recipe for a neat treat that’s good for you too.

Ingredients

  • 2 cups low carb marinara or spaghetti sauce
  • 1 cup low carb bread crumbs (or make your own - see below)
  • 2 eggs, lightly beaten
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup atkins bake mix or soy flour or whole wheat flour
  • 2 tsp olive oil
  • 4 boneless skinless chicken breasts
  • 8 oz part skim parmesan cheese - shredded

    Coat the chicken with the salt, pepper and flour - I mix them up and put them in a baggie, then add the chicken to the bag and shake. Lay the breadcrumbs out on a tray and dip the chicken in the egg mixture, then press into the crumbs to coat.

    Put the olive oil in a large skillet and heat on medium heat. Cook the breasts until golden brown on one side then about half that time on the other. When the juices run clear, transfer the chicken to a greased baking dish our on the sauce and top with the shredded Parmesan cheese. Let this sit under the broiler for 2 or 3 minutes until the cheese is melted.

    This recipe has about 15 grams carbs in each of the 6 servings.

    * MakingYour Own Low Carb Bread Crumbs - If you can’t find low carb bread crumbs, you can make your own by taking low carb bread and toasting it in the oven on a cookie sheet. Once it is hard, grind it up in the food processor or blender. You can use these bread crumbs on any low carb dish aside from this chicken Parmesan recipe.
