Coat the chicken with the salt, pepper and flour - I mix them up and put them in a baggie, then add the chicken to the bag and shake. Lay the breadcrumbs out on a tray and dip the chicken in the egg mixture, then press into the crumbs to coat.
Put the olive oil in a large skillet and heat on medium heat. Cook the breasts until golden brown on one side then about half that time on the other. When the juices run clear, transfer the chicken to a greased baking dish our on the sauce and top with the shredded Parmesan cheese. Let this sit under the broiler for 2 or 3 minutes until the cheese is melted.

* MakingYour Own Low Carb Bread Crumbs - If you can’t find low carb bread crumbs, you can make your own by taking low carb bread and toasting it in the oven on a cookie sheet.
