Low Carb Chicken Salad Recipe

This low carb chicken salad recipe is great to use in a lettuce and tomato salad, or to eat on low carb bread or one of those low carb wraps. It combines lots of tasty foods which are actually optional. If you prefer a basic chicken salad, you can simply mix the chicken with mayo and add a bit of seasoning!

Ingredients

  • ½ cup mayonnaise
  • 1/2 tsp poultry seasoning
  • 1/4 tsp salt
  • pinch of black pepper
  • 1 pound cooked chicken chopped up
  • 1 stalk celery, leaves and all
  • 1/2 cup almonds chopped fine
  • In a bowl, combine the mayo, salt, pepper, and poultry seasoning. Mix well. Make sure the chicken, celery and almonds are chopped into small pieces - some people like them to be very tiny and others prefer them a bit chunky but you can chop them to your preference. Add the chicken, celery and almonds a little bit at a time until all ingredients in the salad are mixed well.

    This makes about 4 servings with hardly any carbs to speak of!
