Here’s my favorite low carb crock pot recipe for beef:

Buy a chunk of beef that will fit in your crock pot without popping out over the top or having to be crammed against the sides. I usually buy beef that says it is for the crock pot or buy beef for pot roast. Slice up an onion, a couple of cloves of garlic (you can omit this if you want) and 2 celery stalks.

Put the onion, celery and garlic in the crock pot and add enough water to cover them. Put the meat on top of the veggies. Cook on low for 7 hours or until done. If you want to make a gravy from the juices you can stir in some soy flour or Atkins Bake Mix after you remove the meat.
